I love being a runner. There’s something about the hello nod to other runners when you’re out running that feels inclusive. We’re supporting each other on our quest for health. Or something like that. Whatever it is, I like it.
When I think of my running goals, I’d love to comfortably run 7 miles every time I went out. I’m over the 5 mile hump, so I’m close, but my knees and ankles are trying to tell me otherwise. First, I have a tight IT band, so I use a foam roller (this helps my knees). In case you’re wondering, foam rollers work miracles. But then I hurt my ankle last August and still have been trying to make it strong again. Last week wasn’t so nice on my ankle; a little reminder that I need to strengthen on top of running.
So speaking of exercise, I’m in love with core workouts. I don’t have any gym memberships, but bodyrock.tv is awesome. I’d love to turn our garage into a place that’s better suited for working out, it will be great especially in the winter rainy months. If you’re looking for a great workout, I’m still sore from Saturday’s 600 Rep Fat Burner Workout. I’m sore every time. I’ve done this one probably 6 times, still not doing the full 600 reps. I’ve only done 300 max. And the very first time I only did 150. The key is to do the exercises with as little breaks in between as possible. It gets you the most that way. Maybe this week I’ll do the full 600. Can you say #sweatinglikeapig. Seriously, her form is amazing. I have a lot of work to do.
So a while ago, a friend asked for a pizza recipe…without cheese. When eating vegan, is there anything that can replace crusty cheesy pizza? Nope. Nothing is going to be exactly the same. But I think I might have found a good replacement.
Taco pizza is one of those things that gets forgotten. I used the cashew creme recipe from my enchiladas, a favorite whole wheat pizza crust recipe, and some taco seasoned black beans for the girth of the pizza. Top that with cilantro and diced veggies and you have a great meal. Maybe add some salsa and guacamole. Mmmm…hello menu for this week.
It’s fun to serve this as “choose your own adventure” style: get your slice of pizza and put your own toppings on. This makes it versatile and extra fun for kids.
