I am loving running right now! That and weight training. I love feeling like I’m getting strong and it really helps me feel like I can run faster and stronger.
Two of my favorite things right now are my 10 lb medicine ball that Tyler got me for mother’s day and his 30 lb slam ball, compliments of father’s day. I know, we get each other pretty cool gifts. They are awesome for sit-ups, lunges, throwing, slamming, lifting, pressing, etc.
So fueling for these work-outs is kinda important. Lunch seems to sneak up on me sometimes, but I feel so much better through the day if I actually take the time to sit down and eat rather than snack through the afternoon.
I love avocado on a sandwich. As a tip, slicing and dicing avocados is super simple.
Half your avocados. Holding a half without a seed, carefully slice down the length, careful to not slice through to your hand. If you just want slices, stop there. If you want diced avocado, then continue slicing perpendicular to the slices you already made.
From there, use a spoon to scrape the avocado, already neatly sliced and diced, out of the skin. Layer on your sandwich, sprinkle on a salad, or top your taco.
I like to use dave’s killer bread, spread hummus on both sides, layer avocado on one side, tomatoes and peperoncinis on the other, sprinkle salt and pepper on top of all that, and carefully layer lettuce between the two side.
This is a melt in your mouth sandwich. I think I ran out of bread, so I guess I’ll be making some in the morning so I can have this sandwich for lunch!
- 2 slices of bread
- 1/2 avocado, sliced
- 1 tomato, sliced,
- pepperoncini's, sliced
- 2 lettuce leaves
- salt and pepper
- Lay our your sandwich bread. Spread the prepared hummus on both sides. On one side, layer avocado slices on top of the hummus. On the other slice of bread, layer the tomato and pepperoncini slices. Sprinkle both sides with salt and pepper. Place the lettuce on the tomato side and carefully stack everything together. Enjoy your lunch!
