Warm blankets. Warm feet. Warm cider. Warm hearts. Isn’t that what this holiday season is about. Yes, yes it is.
Sometimes I get tired of my typical breakfasts: 1) almond butter with toast and an apple for breakfast, 2) english muffin with avocado and tomato on it, or 3) green smoothie with granola. Sometimes I just want something warm and savory and exploding with flavor.
This is that thing. This is your new breakfast.
I didn’t know that pomegranates were little pockets of joy when put on everything.
Put them in cranberry sauce, sprinkled on a salad, or on eggs!? Eggs are something I keep on-hand in our house, all other meat things don’t really show up. Recently I’ve been craving some eggs, so I spruce them up with some fun additions. A miracle happened after I had seeded some pomegranates and they whispered my name from the fridge. I had to oblige them.
You are going to be happy I did ’cause now we’re having this exchange. While you’re at it though, throw some diced sweet potatoes in a bowl and microwave them. They taste really good on there too. And tomatoes. I don’t know if there’s any dish that doesn’t taste good with tomatoes. Salt and pepper the top and you have some savory knock-your-socks-off combo that will make you come back for more.
