Recently I’ve made a couple things with turmeric in them and I’m loving it! I was just reading about turmeric and in some places in India, they use turmeric tubers attached to string as necklaces or bracelets during weddings. So interesting!
I can’t tell you how much I love this soup. I know I raved about how I love black bean soup, but now there’s a contender. And although it’s actually going to be quite warm here in Portland this week, this is still on the menu again.
You can look at the original recipe to include butter and chicken broth, mine below doesn’t. This is for the straight-up soup recipe. Scroll further for another alternative recipe!
Okay people, we’re getting crazy now. I loved the flavor of this so so much that I wanted to see what else I could make with it.
I threw in more veggies, basil, and coconut milk and have another winner! Doesn’t coconut milk make everything taste good?!
We had this over rice (I’m thinking of one of my favorite Thai restaurants right now) and also as a soup. The chunks in it add a whole new level of goodness. But if you ask me to rate one against the other: total pureed v. this…not sure who the winner is. They’re just different. I love both. Soup might win for me, but like I said, I’m kinda a fan of it. 🙂
