I have been thinking about these flavors for a while. Lemon, zucchini, and warm pasta. It doesn’t get much better than that!
Personally, I like anything with lemon in it. It could be dessert, so why not dinner?! That’s what was in my Cauliflower Broccoli Slaw too. And I know lemons are bad for your teeth, but there’s something kinda good about sucking on a lemon. Am I the only one? I can’t be.
On a total side note, I’ve decided this is the year to get a glass drink dispenser. I spotted one at Ross the other day that I think I’m going to go back and pick it up. I like the ones that lift off the counter. That way they don’t drip onto the floor. Maybe I shouldn’t be giddy about this rather insignificant purchase, but I am! Next on the kitchen buy list (after the dispenser) is a utensil caddy. I’m still searching.
This recipe is so light and refreshing, besides being simple. I could just eat the veggies out of it and be perfectly satisfied. If you want a gluten free option, I imagine this would taste good on top of quinoa.
