Can I just tell you how much I love Portland!
First of all, it’s so so so green. Second, there really is amazing food here. And third (I can’t really do a “last,” the list is endless), it’s such a great location to do lots of outdoor things.
On Saturday, we went on a family hike to Pittock Mansion from Lower Macleay Park Trailhead. It’s a 5 mile round trip and the kids did great. Our 2-year-old did most of it in the backpack, but did enjoy some spurts of running. He was only scary on the switch-backs coming down the trail. I think I saved him from going over the edge at least twice! But it was perfect weather and a great trail.
Speaking of great. Please make this salad. It’s probably the easiest salad you’ll ever make.
It only has 4 main ingredients, topped with salt and pepper. It’s super fresh with the hint of lemon and would be perfect for a picnic on the go. Yea for summer!

- 2 cups quinoa, cooked
- 2 tomatoes, diced
- large handful of flat-leaf parsley, chopped
- zest from one lemon
- salt and pepper
- After the quinoa is cooked, rinse under cold water until it is no longer warm. (My method: I scoop the quinoa into a bowl and fill it with cold water, shake water around a bit, put a wire mesh screen on the top of the bowl, tip sideways and drain the water out, and repeat until cool). In that same bowl you can combine the quinoa with the tomatoes, parsley, and lemon zest. Mix to combine and add salt and pepper to taste. If you want more tomatoes, by all means add them. They are the best.
