It always makes for an interesting weekend when you throw in a visit to urgent care! My two-year-old takes the cake for having the most visits now, I’m hoping it’s not foreshadowing my future with this child. But it probably is.
This time it was an ear infection. Correction, a double ear infection. You know it’s bad when the doctor says, “this is the good ear?!” The other one was purple and bulging. Apparently it’s okay if an ear drum bursts as well. His hasn’t but I guess it still could. But with new meds, we’re doing good now. Phew!
This is a great soup. Making this was extra fun this weekend because my 7-year-old wanted to help me. And he was actually really helpful. I hope this is the beginning of a long history in the kitchen with him. I want him to have the memories I have cooking with my parents.
This posole was perfect with our stormy weather and is soup-er (hahaha…okay, I’ll stop) versatile.
This particular version infused posole I’d made before with a white bean chili recipe. We like them both and this particular child loves the flavors of the white bean chili, so we decided to try them together.
Mission accomplished. It was very satisfying and good; we’ll be making it again for sure.
