Today was an ikea and clean up my desk day. We were just at ikea on Saturday, but things didn’t quite fit like we thought. Oh, ikea. But it’s good because now we know what we really want. Over on Pretty Dubs I blog about my house projects and next on the list is a kid office space in our upstairs loft. I’m really excited!
Okay, enough about projects.
I know this seems like a lot of quinoa recently, but when you have leftovers from Quinoa Hawaiian Haystacks, you’ve got to put it to good use. The best way is to make your very own corn quinoa salad.
So sometimes when I go to make a salad, it doesn’t always sound very interesting. So I’ve found that the key to helping it be more tasty is simple.
This time, use the corn that you shucked, add the leftover quinoa, and throw in a couple extra veggies. It’s fast and easy. The bonus is the change in textures and flavor. And really, with added avocados and tomatoes can anything go wrong?
