I love to make easy recipes that taste really good. This is one of them. Combine fruit and coconut and both are wins to me! If you haven’t heard of coconut cream yet, be prepared, it’s pretty awesome.
Living in Oregon we have the privilege of eating Hood Strawberries. They are red all the way through, super juicy, and really addicting. I was just as bad as the kids at shoving these in my face. This year is the first year I’ve bought so many and I wish I would have bought more.
I started this dessert off by slicing the strawberries and putting them in individual bowls. This slightly helps the mouth-stuffing factor.
After that I put a nice dollop of coconut cream on top. This is made super fast and easy in the food processor. You ready for this…TWO INGREDIENTS! Coconut milk (just the fat, drain off the water – easier done if it’s been in the fridge) and powdered sugar.
Have a wonderful summer, eat this for the 4th of July maybe…even add some blueberries for a red/white/blue variety, sprinkle with chocolate chips if that’s your thing, you can’t go wrong.
