Happy Valentine’s Day!
How are you celebrating loving others? I was talking on my instagram the other day how my whole life revolves around love and kindness and accepting the best from others. What an awesome chance to celebrate that with a dedicated day every year…you don’t have to be in a relationship with someone special to practice this one!
And since it’s Valentine’s Day, you’ll need some sort of treat.
I’m going to give you something with chocolate (of course) and coconut. I love these two flavors together – macaroons anyone? These are easy, fast, and can be versatile with substitutions and additions…date bars in their finest hours.
One quick question though, do you or have you ever eaten date bars with apples? Yes, you’re totally in the club! No, then you need to try it. The contrast in texture and flavors is the perfect pairing. Like pizza and carrots. Sounds funky, but it makes it so much more rewarding to eat.
I combine the mixture in a food processor, dump it out on parchment paper, make sure it’s balled up good (sometimes use my hands), then put another piece of parchment paper on top of that, use my rolling pin to flatten it out, then use that same parchment paper cut into rectangles to fold around individual pieces of my bars. It makes them easier to stack, grab, and share.
I’ll often make more than one kind of bars at once. Maybe the peanut butter ones or maybe the cherry chocolate chip ones. They’ll all go in the same container to store, but to tell them apart, I’ll use a sharpie on the outside of the parchment to label them. Works perfect.
